Quinoa Salad with Dried Apricots and Broccoli

For all you resolution-makers, here you have it: the ultimate I-ate-too-much-over-the-holidays dish. Veggies? Check. Whole grains? Yup. Flavor? Heck yes.

I adapted this recipe from Fit Sugar, leaving out cherry tomatoes (I forgot ’em) and adding a sprinkle of sesame seeds.
